When we talk about salads, we imagine something very light, full of proteins, and vitamins. And of course it should be palatable. Most of us are under the notion that salads are additional to our meal. No. This is a wrong concept. Without discomfort, we can enjoy a variety of salads, as a full meal. The beauty is that even after having such a FULL meal, we still feel light, energetic, fresh and healthy. With my own experience I would like to pinpoint one important thing. As far as possible, one should not eat non-vegetarian food. It is rarely fresh, it is frozen, and are not sure about the quality of the product. Also it is heavy to digest.

Fresh vegetarian salads, and a combination of fruits, pulses, nuts. etc. can fulfill all the requirements of the body, as well as the mind too.

The quantities mentioned are to serve 4.


1) FRESH CARROT SALAD...

Ingredients
:
4 grated carrots
4 tbs. grated fresh coconut
1/2 tea sp. lemon juice
salt, pepper, curry leaves, mustard seeds.

Mix all the carrot, coconut, lemon juice, salt, and pepper. Put a vessel on a fire, and when the pot is quite hot, sprinkle curry leaves & mustard seeds in it. Remove, add into salad and toss it nicely.


2) GREEN SPROUT SALAD.....

Ingredients:

100 gms. soft peanuts (SOAK IN WATER FOR 3 TO 4 HRS.)
200 gms. Sprouted moong dal (lentil)
1 finely chopped onion, 1 tomato, 1 capsicum.
salt, pepper, lemon juice, jaggery syrup.

Mix all ingredients well. Garnish with some crushed sesame seeds.


3) MACARONI SALAD...

Ingredients
:
1 cup Boiled macaroni
1/2 cup baked beans
1 finely chopped spring onion
1tsp. salad oil,
1tsp. lemon juice
sugar, salt, pepper.

Mix all ingredients well, with clean hands. Touch of our own hands increase the taste. Fill into a bowl & garnish with celery leaves in the centre.


4) BANANA SALAD....

Ingredients:

2 ripe bananas
1/2 cup tight curd (hang in a cloth for 3 hrs.)
a split spring onion, broken pieces of peanuts, mustard sauce, salt, pepper, pinch of sugar.

Mix all ingredients together. Cut bananas into two pieces lengthwise. Spread the mixed paste gently on bananas. Spread some salad leaves on a plate and serve the banana salad on them.

It's melted, mixed, sweet and sour taste will make your mouth feel like it is filled with water.


5) CORN AND GREEN CHUTNEY SALAD....

Ingredients:

1 cup fresh boiled corn.
2 cucumbers
4 tbs. coriander leaf chutney.
(paste of coriander leaves, cumin seeds, salt, lemon )

Peel the cucumbers. Cut into a few broad pieces. Scoop a little from one end of each piece. Sprinkle a little salt and lemon juice. Add corn into chutney to get a dry consistency. The corn should appear 'bound' with paste, not covered with it.

Fill this corn paste in the scooped cucumber pieces. In a serving plate on the bed of grated carrot decorate these pieces in a standing shape.

It gives a very cool, refreshing feeling specially in on hot days.


6) BEET ROOT SALAD....

Boil some beet root . Peel, and cut into round pieces. Sprinkle some grated cheese, salt, lemon juice, sugar, pepper and finely chopped celery. You can never forget the taste of sweet and sour beet root salad.
