According to Hindu religion, Sage Vyasa dictates the Hindu epic Mahabharat and Lord Ganesh composed it. Actually, Sage Vyasa requested to Lord Ganesh to composed the Mahabharat. Lord Ganesh agreed and wrote the whole story of Mahabharat narrated by Vyasa.

Yes, it is said Veda Vyasa recited the Mahabharata and Lord Ganesh had written it. But there was a condition that Vyasa would not stop dictating and Ganesh would not stop writing. It took them three years to complete the epic. There was one more condition that Ganesh would understand the verses and then write.

There is one more information to it. After conceiving the Mahabharata the sage approached to Brahma that he has conceived an excellent work and is looking for someone who can take down the narration. Brahma asked him to approach Ganesha.

Yes, true. The condition of continuous narration and continuous writing was from Ganesha's end. Vyasa agreed to it but topping it with another condition that Ganesha should understand the verses and then write. Vyasa would occasionally compose complex stanzas and Ganesha used to take some time to understand it. In such pause situation or intervals, Vyasa would compose many stanzas in his mind.
