First thing is that Vedas claim Cows as aghnya that means not to be killed it is enough to mean that there Hinduism prohibited beef. I am giving some references that will clear your doubt.

“One who partakes of human flesh, the flesh of a horse or of another animal, and deprives others of milk byslaughtering cows, O King, if such a fiend does not desist by other means, thenyou should not hesitate to cut off his head.” Rig-veda (10.87.16)

Surely, one who kills a cow or a bull commits the most heinous crime. Mahabharata, Shantiparva 262.47

It is definitely a great sin to kill innocents. Do not kill our cows, horses and people. Atharvaveda 10.1.29

" Do not kill cows and bulls who always deserve to be protected." Yajurveda 13.49

In Rigveda cow slaughter has been declared a heinous crime equivalent to human murder and it has been said that those who commits this crime should be punished." Rigveda 7.56.17

"The Aghnya cows – which are not to be killed under any circumstances– may keep themselves healthy by use of pure water and green grass, so that we may be endowed with virtues, knowledge and wealth. " Rigveda 1.164.40 or Atharv 7.73.11 or Atharv 9.10.20

In the Mahabharata, we have Bhishma saying: "Cows represent sacrifice. Without them, there can be no sacrifice…Cows are guileless in their behaviour and from them flow sacrifices…and milk and curds and butter. Hence cows are sacred..."

From Mahabharata, Anusasana Parva, Bhishma said:

No sacrifice can be performed without the aid of curds and ghee (clarified butter). The very character of sacrifice which sacrifices have, depends upon ghee. Hence ghee (or, the cow from which it is produced) is regarded as the very root of sacrifice.
Cows have been said to be the limbs of sacrifice. They represent sacrifice itself. Without them, there can be no sacrifice. With their milk and the Havi produced therefrom, they uphold all creatures by diverse acts. Cows are guileless in their behaviour. From them flow sacrifices and Havya and Kavya, and milk and curds and ghee. hence cows are sacred.

Vyasa said:

Cows are sacred. They are embodiments of merit. They are
high and most efficacious cleansers of all.

Vasishtha said:

One should never eat the flesh of cows.

One should never show any disregard for cows in any way. If evil dreams are seen, men should take the names of cows. One should never obstruct cows in any way. Cows are the mothers of both the Past and the Future. Cows have become the refuge of the world. It is for this that cows are said to be highly blessed, sacred, and the foremost of all things. It is for this that cows are said to stay at the very head of all creatures. Every morning, people should bow with reverence unto cows.

Cows are the best Havi for the deities. The Mantras called Swaha and Vashat are forever established in cows. Sacrifices are established in the cows. Cows constitute the fruit of sacrifices.Cows are the future and the past, and Sacrifices rest on them. Morning and evening cows yield unto the Rishis, Havi for use in Homa (sacred fire ceremony).

Vyasa said:

Cows constitute the stay of all creatures. Cows are the refuge of all creatures. Cows are the embodiment of merit. Cows are sacred and blessed and are sanctifiers of all.

One should never, in even one's heart, do an injury to cows. One should, indeed, always confer happiness on them.

" There should be excellent facility for pure water for Aghnya Cow " Rigveda 5.83.8

"Among cows I am the wish fulfilling cow." Srimad Bhagavad-Gita: chapter 10, verse 28

" One should never show disrepect for cows in any way. When cows are grazing or laying down relaxing one should never disturb or annoy them in any way. Cows should never be killed in any type of sacrifice or slaughtered in any way for food as the killing of cows constitutes the most heinous of all sins in existence." SriMad Bhagwatam

" Those who feed on human, horse or animal flesh and those who destroy milk-giving Aghnya cows should be severely punished." Rigveda 10.87.16

" Cow killers and cow eaters are condemned to rot in hell for as many thousands of years as there are for each hair on the body of every cow they eat from. " Sri Caitanya Caritamrita adi lila, chapter 17 verse 166

" Cow – The aghnya – brings us health and prosperity " Rigveda 1.164.27

" A guru, a teacher, a father, a mother, a brahmana, a cow and a yogi all should never be killed." Manu-samhita, chapter 4, verse 162

" Do not kill the cow. Cow is innocent and aditi – that ought not to be cut into pieces " Rigveda 8.101.15

“My Lord, You are the well-wisher of the cows and the brahmanas, and You are the well-wisher of the entire human society and world.” (Vishnu Purana 1.19.65)

" Destroy those who kill cows " Yajurveda 30.18

" The Aghnya cows and bulls bring you prosperity" Yajurveda 12.73

Some scholars and indologists in India as well as from western countries without having ever experienced the Vedic culture as a way of life have speculated that cows and other animals were sacrificed in Vedic ceremonies. They take unorthodox interpretations of obscure verses in the Vedas, out of context to postulate this point of view. Two examples of this we are giving as follows.

First in the Satapatha Brahmana, 3.1.2.21 there is a gross interpolation from western scholars echoed by indolologists around the world that the great sage Yajnavalkya would eat the tender meat of cows and bulls. The word dhenu which they translated as cow factually refers to the milk products of the cow only and not the cow herself and the sanskrit word anaduh factually refers to the grains produced by the bull from ploughing the fields. What exactly Yajnavalkya has stated in this verse is that he can eat what is amsala. The interpolators, some being ignorant and some not so ignorant of the rules of Panini have translated amsala as being tender flesh. Panini is the authority on all matters concerning the rules of Sanskrit grammar and according to sutra 5.2.8 of Panini the word amsala can only mean nourishing and strength bestowing. Also in the Amarakosa 2.6.44 it states that amsala is mamsala which never applies to flesh tender or otherwise. Mamsala specifically aplies to cream and sweets made from milk products as well as fresh and dried fruits. So there is no basis according to sastra for translating amsala as flesh.

Secondly some scholars with an extremely limited fund of knowledge want to postulate that meat was an essential ingreient of madhuparka because of one verse in the Rig Veda VI.44.21 which equates Indra as having the strength of a bull and also mentions the sweet drink madhupeya. So they then interpolated the translation to say that bull meat was a part of madhuparka. In this way due to their academic status they are able to mislead the public. The root word madhu means sweet and is sometimes even referred to honey. In the Monier-Williams Sanskrit-English Dictionary page 780 the meaning of madhuparka is offerrings of honey and milk also sometimes containing equal parts of curds and ghee to a respected guest. No where in the Vedas can be found any reference to meat being an ingredient of madhuparka.

If one indulges in meat-eating anyway, it is to be understood that he is acting in ignorance and is making his future very dark. Of all kinds of animal killing, the killing of cows is most vicious because the cow gives us all kinds of pleasure by supplying milk. Cow slaughter is an act of the grossest type of ignorance. In the Vedic literature (Rig Veda 9.4.64) the words gobhih prinita-matsaram indicate that one who, being fully satisfied by milk, is desirous of killing the cow is in the grossest ignorance.

So other examples like the previous two interpolators have found useful for their obscure translations; but the clear, direct, unequivocal statements found throughout the Vedas against cow killing they ignore.

Hey friend, thanks for such a great post you wrote about cow. Well, we all Hindu believe Cow is not an animal to us but Cow is our mother. According to Hindusim, all the devi and devtas resides in Cow. But it is unfortunate of this country (India) where Cow is now using politically.
